Homemade Chicken Spaghetti

I love receiving recipes from friends. This recipe is from my friend, Trudy Cox. She is one of the best cooks that I have ever met. Plus, she practices Biblical hospitality. She loves well, serves well, but most of all cooks well. Please don’t turn down an invitation to go to her home. You will be blessed beyond measure.

Here's how:

Ingredients:

1/2 stick butter

1 cup onion, diced

1 cup green bell pepper, diced

1 can Rotel tomatoes

2 cans Cream of Mushroom soup

1 small jar diced pimentos

1 pint chicken broth

1 cup chicken, cut up

2 cups cheddar cheese, grated


Directions:

Preheat oven to 250 degrees. Saute onions and bell pepper in butter, until tender. Add Rotel, mushroom soup, pimento, broth, and chicken to the pot. cook together. Next, in a separate pot, cook and drain a 12oz package of spaghetti. Add pasta to the chicken/vegetable mixture and stir to combine. Add 1/2 cup of the cheese. Pour ingredients into a casserole dish and top with the rest of the cheese. Bake for 30 minutes.Serve and enjoy!
