King Ranch Chicken

  • 4-5 Chicken (boneless, skinless)Thighs, boiled until no pink in the center. Cook for 30 minutes in boiling salt water.

  • 6-8 flour tortillas

  • Chopped onion to taste

  • Chopped green pepper to taste

  • 1 tsp chili powder

  • 1 cup of milk

  • 1 can of cream of mushroom soup

  • 1 can of cream of chicken soup

  • 1 can of Rotel

  • Cheddar cheese shredded


Cook chicken. Remove and chop chicken into bite-size pieces. Spray with cooking sprays 2 qt casserole dish. Layer 4-6 flour tortillas, until the bottom of the pan is covered. Placed chopped chicken on top of tortillas. Mix the remaining ingredients, except cheese, together in a separate bowl. Pour over the chicken and top the dish with the cheese. Bake at 350 for 40 minutes. Serve and enjoy!!
