I love soup on these cold winter nights. This recipe is new to my rotation and it is delicious. I discovered this cookbook online when looking for some new recipes. This is yummy and warm from the top of my head to the tips of my toes. Make it tonight!
1 pound mild Italian sausage
1/2 cup dices yellow onion
4 cloves garlic, minced
6 cups low-sodium chicken broth
1/2 cup sun-dried tomatoes, drained and chopped
1 teaspoon dried oregano
2 cups kale or spinach, chopped
3/4 cup heavy cream
salt and papper to taste
grated Parmesan for topping
In a large pot, brown sausage over medium-high heat. Drain.
Add onion and cook for a few minutes until soft. Add garlic and cook for an additional minute.
Stir in chicken broth, tomatoes, and oregano. Bring mixture to a simmer.
Stir in kale and heavy cream. Add salt and pepper to taste. Sprinkle with Parmesan for serving.
