Tuscan Soup



I love soup on these cold winter nights. This recipe is new to my rotation and it is delicious. I discovered this cookbook online when looking for some new recipes. This is yummy and warm from the top of my head to the tips of my toes. Make it tonight!


Ingredients:

  • 1 pound mild Italian sausage

  • 1/2 cup dices yellow onion

  • 4 cloves garlic, minced

  • 6 cups low-sodium chicken broth

  • 1/2 cup sun-dried tomatoes, drained and chopped

  • 1 teaspoon dried oregano

  • 2 cups kale or spinach, chopped

  • 3/4 cup heavy cream

  • salt and papper to taste

  • grated Parmesan for topping


Directions:

  1. In a large pot, brown sausage over medium-high heat. Drain.

  2. Add onion and cook for a few minutes until soft. Add garlic and cook for an additional minute.

  3. Stir in chicken broth, tomatoes, and oregano. Bring mixture to a simmer.

  4. Stir in kale and heavy cream. Add salt and pepper to taste. Sprinkle with Parmesan for serving.
