Paleo Burger Bowl with fries

It’s May, and that means I’m going to try to eat better. I made these burger bowls for Duke and I tonight. Duke loved it and so did I! Easy and delicious. I skipped the potatoes and cooked frozen sweet potato fries in the oven. Serve to your loved ones soon!!! Enjoy!

Ingredients:

Special Sauce:

  • 1/3 cup paleo mayo homemade or purchased

  • 1 tablespoon dijon mustard

  • 3 tablespoons ketchup

  • 1 tablespoon dill pick relish or chopped dill pickles

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

Bowls:

  • 6 slices paleo friendly bacon no sugar added for Whole30

  • 1 lb ground beef I used 80°/o lean grass fed beef

  • 1/2 teaspoon sea salt or to taste

  • Large pinch black pepper or to taste

  • 1/2 teaspoon garlic powder

  • 4 cups greens of choice. I used hearts of romaine

  • Cherry tomatoes

  • 1 medium purple onion thinly sliced

  • Sliced dill pickles no sugar added

  • 1 large avocado

Instructions:

Preheat your oven to 425° F and line 2 baking sheets with parchment paper. Toss the sliced potatoes in the oil and sprinkle all over with the seasonings. Spread out on the baking sheet so that no two fries touch, this will help them roast very crispy. Roast them in the preheated oven for 30 minutes or until golden brown and crisp.* To cook the bacon in the oven, lay it out on a second baking sheet and bake it for 16-20 minutes in the preheated oven, or until it's cooked to preference.* You can do this in the same oven with the fries on a different rack. If you prefer, you can pan-fry the bacon in a large skillet until crisp.

While the fries and bacon bake, make the special sauce. Whisk all ingredients together in a small bowl until well combined and set aside. Heat a large skillet over medium-high heat and drizzle a little bit of oil in the skillet. Once hot, add the beef and sprinkle with salt, pepper, and garlic powder. Cook for about 2-3 minutes, stirring and breaking up lumps until browned.

This recipe will make 4-6 bowls. To assemble the bowls divide the greens between the bowls and top with tomatoes, onions, pickles, beef, cooked bacon, and hot fries. Lastly, slice the avocado and divide between the bowls and serve drizzled with the special sauce, or leave it on the side for dipping. Enjoy!

*Fries: You can choose to purchase, slice, and bake fresh potatoes in the oven or go with frozen sweet potato fries.
