Texas Caviar

Looking for a recipe that makes you feel like you're eating the rainbow while also being comfy cozy on a cold day? I made this for New Year's Day for my family and everyone loved it! We served it with tortilla chips, but the next day, I placed it on top of a meat dish for dinner and told Charlie I love this way even better. This is a great recipe to use year-round and is healthy too! Here's how...


Ingredients:

  • 1/4 cup fresh Lime Juice

  • 1/2 cup Olive Oil

  • 4 cloves of Garlic, minced

  • 1/2 Cup Cilantro, finely chopped

  • 1/4 cup thinly sliced Green Onions or diced Red Onion

  • 2 tsp Cumin

  • 1 1/2 tsp Kosher Salt, plus more if needed

  • 1/2 tsp Pepper

  • 1 Orange Bell Pepper, small diced

  • 1 Jalapefio, seeded and small diced

  • 1 cup Tomatoes, seeded and diced

  • 1 15 oz canned Corn, drained

  • 1 15 oz can of Black Eyed Peas, rinsed and drained

  • 1 15 oz can of Black Beans, rinsed and drained


Directions:

In a large bowl, whisk together lime juice, olive oil, garlic, cilantro, onion, cumin, salt and pepper. Add the remaining ingredients and stir until combined. Season to taste. Serve with chips or serve on top of grilled chicken, pork, or fish. You can even serve as is on chips and it tastes amazing.
